Blu di Capra, from Valsassina, Italy

A mixed milk, 50% cow and 50% goat.

blu di Capra, is firm and does not crumble, the flavour is slightly acidic, more salty under the crust and very well balanced.

the aroma is of milk, yogurt, grass, straw and toasted nuts with a pleasant goat sensation.

7kg cheese, available in 1/4 (approx. 1.75kg)
