Pecorino Sardo is a sheep's milk cheese from Sardinia. It is made with whole milk and annimal rennet, shaped and salted then lightly smoked. The "maturo" version is sold only after 4 months. the texture is white to pale straw in colour and delicate in flavour.
Richer and not as salty in taste than the Pecorino Romano, the Sardo is ideal to compliment a risotto or to use in Pesto but also fantastic on a summers' cheese board.
