Mozzarella, derived from the Italian verb mozzare, meaning to cut, refers to the cheese making process. The curds are cut, rested, then heated and finally stretched and kneaded, then shaped into ball shapes or pleats.
We stock many mozzarellas (cows milk 125g, Baby size 10g "bocconcini", buffalo 125g), but the jewel has to be the Nerina buffalo milk Mozzarella Campana . This D.O.P. cheese is made in Campania region and arrives with us 5 days later. the shel-life on the product is usually about 10 days.
The taste is fresh and lactic with a little acidity. the texture is soft and creamy (real Mozzarella should not be rubbery!). This cheese should be enjoyed as part of a meal with a drizzle of very good olive oil.
