Time for a Change?

Well the Neals Yard creamery in Herefordshire thinks so...
Forget what you had tasted before. The cheese is now made with:

  • new bulk starter

  • new culture

  • slight change of recipe

in order to increase the complexity in the cheese. The taste is lactic and slightly salty, the texture is chalky in the centre and loose under the rind.
