Let's talk Comte

Dating back from the 12th century, Comte is now the largest production of French AOP cheese (51,000 Tonnes annualy). It takes 450 litres of milk to produce a 40kg wheel.
Only the milk of the Montbeliard (95%) and the Simmental (5%)cattles is permitted and each cow must have a least 1 hectare of grazing.
The wheels are made in fruitieres and then bought by the affineurs for maturing.
