What can we say about the cheese? It won "Best Scottish cheese" at the British cheese awards 2008, it is Gordon Ramsay's prefered ingredient for his pear and amaretto cheese cake, it is used by some of the finest chefs in Scotland, it's organic and we sell half a tonne of it per year, etc.. But really, it is perfect spread on oatcakes (or bread for you continentals). It may not take the prime position in your counter but you definitely shouldn't ignore it.
